Pan Italiano – Crusty Italian Style Bread

A quick Italian bread today.  Pan Italiano. Two loaves of Italian bread dusted with basil and oregano came out of the oven today. A crackly crust with a soft and chewy interior made these 2 loaves a favorite. I’m glad I made two. Because the bread didn’t last very long! This is a rustic bread from the south of Italy. The dough is wet. Namely 72.5% hydration. Additionally just about impossible to make without a mixer. Although I know at least one person who would probably dispute this.
