Lamb kofta, was on the menu today. A good buy on some fresh ground lamb motivated me to make some kofta. Truly what would kofta be without a little homemade hummus and yogurt? I wish you could taste it.
Koftas are usually made with lamb, beef, mutton or chicken. Fingers prepared as in the Arab style. Spices for kofta vary widely. Specifically I add ground coriander, ground cumin, ground cinnamon, allspice, cayenne pepper, ginger, black pepper, fresh mint and fresh coriander. I serve with pita, and usually a side of hummus and tabouleh. Additionally adding chopped onion, carrots and cucumber. Further I typically prepare a cucumber raita from fresh yoghurt as an accompanying extra.
The tabouleh made of tomatoes, finely chopped parsley, mint, bulgur, and onion. Also seasoned with olive oil, lemon juice, and salt.
