Homemade Pasta Semolina

I always wanted to make Homemade Pasta. I never got around to getting a pasta machine. Sure, you can roll and cut by hand, but to make good homemade pasta you need to roll the dough to the right thickness consistently.

Today was Father’s Day. I was presented an Imperia Homemade Pasta Machine in honor of the day. Of course, I had to try it out. So I went to the pantry and pulled out the ingredients I would need. Semolina flour, white flour, sea salt and a bit of extra virgin olive oil. I used 1  1/4 cup of white flour, 3 /4 cup of semolina flour a teaspoon of salt and a teaspoon of olive oil. I used the counter top method of building a flour well. Next I added the beaten egg and olive oil and mixed by hand. Finally I had a nice consistency and an elastic dough. In addition it took a little bit of water to get the dough just right.

The pasta machine was easy to use, starting with the rollers open to the widest setting and working my way towards the final thickness with additional passes through tighter settings. After achieving the right thickness, I made a pass through the cutting attachment. Resulting in a nice batch of tagliatelle that will be cooked an eaten tonight. Certainly with a little more practice I think homemade pasta is in my future.
