Texas Oysters on the half-shell always sound good this time of year. Firstly I took a quick trip to the bay. I picked up a 15 pound sack of fresh Texas oysters early this morning. Certainly this is a great time of year for oysters. They are firm and salty and great with a little lemon. I shucked the oysters and put them on ice. I paid $9.99 for the 15 pound sack and the 30 pound sacks were going for $17.99. However I was not in the mood to pry open 30 pounds today. Bon Appetit!

November 1, is the traditional opening of the Texas oyster season, but opening day had been postponed in 2012 due to a massive outbreak of red tide. Oysters are found throughout the Gulf states – Texas, Louisiana, Mississippi, Alabama and Florida. The season across the Gulf States is typically from September through April.
